You better RUN to the kitchen to make these almond joy snack bites! They’re no bake, protein packed, and loaded with flavor making them the ultimate sweet snack! I’ve shared other snack bite recipes in the past, but I’m pretty sure this is my favorite one yet… each bite even has a surprise almond in the center for a little crunch. They’re really incredible!

Dough:
-15 dates
-84g plain unsweetened pea protein powder
-3/4 cup almond butter
-1/4 cup oats
-3 tbsp coconut flour
-2 tbsp maple syrup
-1/2 cup almond milk (more as needed)
Filling:
-almonds
Chocolate coating:
-1 cup chocolate chips
-1 tbsp coconut oil
Topping:
-coconut flakes
Method:
-make the dough by blending all ingredients in a food processor until a stiff dough forms
-pinch off a piece of dough and flatten it into a circle, then add an almond in the center and roll dough around it to make a sphere
-continue making spheres out of the remaining dough (I made ~35)
-place the bites in the fridge to chill while you make the chocolate coating by microwaving all ingredients on 30 second intervals until melted. Be sure to stir well between each interval!
-dip each bite in chocolate before placing on a parchment lined tray
-sprinkle each bite with coconut flakes
-refrigerate bites until chocolate gardens, ~30 minutes
-enjoy!
