Birthday Cake Protein Muffins

It may not be my birthday, but eating these birthday cake muffins for breakfast still makes me want to celebrate! These giant treats are perfectly fluffy and loaded with protein- the best way to kick off the day to a great start! Recipe is below, and they have the approval of my entire family so you know they have to be good ;))

Ingredients:

-2 cups oat flour

-2 bananas, mashed 

-56 g plain unsweetened pea protein powder 

-1/4 cup maple syrup 

-4 tsp baking powder

-2 tsp vanilla extract

-1 cup plant milk

-1/4 cup sprinkles 


Method:

-preheat the oven to 350F and line large muffin tins with cupcake liners (I made 5 giant muffins, but you could also make regular sized ones if you adjust the baking time!)

-combine all ingredients except sprinkles to form a smooth batter

-stir in sprinkles

-divide the batter between the lined muffin tins

-bake 30-35 minutes, then remove from oven and let cool slightly

-enjoy!
