Chickpea salad is one of my all time favorite recipes. I meal prep it pretty much every weekend to snack on throughout the week! I like to serve it with rice crackers, but of course you could use tortilla chips or even turn it into a wrap or sandwich. Lots of options!

Ingredients (for one serving):
-1/2 cup chickpeas
-1/4 cup onion, chopped
-1/4 cup hearts of palm, chopped
-1 tbsp unsweetened vegan yogurt
-1 tbsp nutritional yeast
-1 tbsp lemon juice
-1/2 tsp dijon mustard
-1/8 tsp garlic powder
-1/8 tsp cayenne
-salt/pepper to taste
Method:
-mash chickpeas about halfway
-stir in remaining ingredients until well mixed
-enjoy with crackers or chips!
