Another recipe for energy bites coming right up! These chocolate covered birthday cake bites are great to stash in the fridge for when you need a quick sweet treat. They'll give you a reason to celebrate even if it's not your birthday!

Dough ingredients:
-15 dates
-84g plain unsweetened pea protein powder
-3/4 cup cashew butter
-1/4 cup oats
-3 tbsp coconut flour
-2 tbsp maple syrup
-1/2 cup almond milk (more as needed)
-1/4 cup sprinkles
Chocolate coating ingredients:
-1 cup chocolate chips
-1 tbsp coconut oil
Topping:
-sprinkles
Method:
-blend all dough ingredients except sprinkles in a food processor to form a firm dough
-transfer to a bowl and stir in sprinkles
-roll dough into balls (I made 30)
-heat chocolate chips and coconut oil together in the microwave until fully melted and smooth
-coat each ball of dough in chocolate and transfer to a parchment lined baking tray
-add sprinkles on top of each bite
-refrigerate until chocolate coating has hardened; about 1 hour
-enjoy!
