Granola Muffins

Introducing my all-time favorite muffin recipe— granola muffins! These guys are packed with chocolate chips, seeds, and dried fruit for the perfect combination of flavors and textures. I seriously could eat these every day and never get tired of them, you gotta try them out!

Ingredients:

-1 cup oat flour

-1 cup oats 

-2 bananas, mashed 

-56 g plain unsweetened pea protein powder

-1/4 cup maple syrup

-4 tsp baking powder

-1/2 cup chocolate chips

-1/4 cup pumpkin seeds

-1/4 cup hemp seeds

-1/2 cup dried cherries

-1 tsp vanilla

-1 tsp cinnamon

-1 cup plant milk


Method:

-preheat oven to 350F and line a giant muffin tins with giant cupcake liners (I made 5 large muffins, but you could also adjust the baking time and make regular sized ones instead)

-mix together all ingredients until smooth

-divide the batter between the muffin tins

-bake 25-30 minutes, then remove from oven and let cool slightly

-enjoy!
