Peanut Zoodles

If you're looking for a refreshing lunch option for a hot day, try these peanut zoodles! Absolutely no cooking required (aside from air frying the tofu)-- just lots of fresh veggies smothered in peanut sauce. Use this recipe to make a single serving, or make multiple to meal prep for the week!

Sauce ingredients:

-2 tbsp peanut butter

-1 tbsp tamari

-1.5 tsp rice vinegar

-1.5 tsp sriracha

-juice from 1/4 lime


Assembly:

-2 cups zucchini, spiralized

-1/2 carrot, sliced

-1/4 red pepper, sliced

-5 cherry tomatoes, chopped

-6 oz extra firm tofu, chopped and air fried until crispy 


Method:

-to make the sauce, whisk all ingredients until smooth

-to meal prep, refrigerate zoodles, veggies, air fried tofu, and sauce in closed containers

-when ready to eat, toss everything together until all veggies are well coated in sauce

-enjoy!
