This raspberry lemon baked oatmeal makes for a great summery breakfast. Prep it over the weekend so that you don't have to think about breakfast during the busy week! This recipe makes about 4 to 6 servings, and you can top off each slice with a bit of yogurt if you're looking for a more complete meal.

Ingredients:
-2 cups oats
-2 flax eggs (1 flax egg = 1 tbsp flax seed meal mixed with 2 tbsp water; let sit 10 minutes before using)
-2 tsp baking powder
-1/3 cup apple sauce
-1/4 cup maple syrup
-1 cup almond milk
-juice and zest from 2 lemons
-1.5 cups frozen raspberries
Method:
-preheat oven to 350F and spray an 8x8 baking dish with oil
-mix together all ingredients, then pour into prepared baking dish
-bake 30-40 minutes, then remove from oven and let cool 10 minutes
-slice and enjoy!
