Introducing my favorite muffin recipe ever— s’mores protein muffins! These muffins have been a hit for everyone I’ve shared them with, and the added protein bonus makes them the perfect post workout treat. You’re gonna want to save this for later!

Base:
-2 cups oat flour
-2 bananas, mashed
-56 g plain unsweetened pea protein powder
-1/4 cup maple syrup
-4 tsp baking powder
-1.5 tsp cinnamon
-1 tsp vanilla
-3/4 cup plant milk
-1/3 cup chocolate chips
-3/4 cup mini marshmallows
Topping:
-2 graham crackers, crushed
-more marshmallows as needed
Method:
-preheat the oven to 350F and line a giant muffin tin with cupcake liners (I made 5 giant muffins, but you could also try smaller ones)
-mix together all base ingredients until smooth
-divide batter between lined muffin tins
-top each muffin with garaham cracker crumbs, more marshmallows, and more chocolate chips
-bake for 25-30 minutes, then remove from oven and let cool at least 15 minutes
-enjoy!
