Vegan Nacho Cheese Sauce

Everybody loves nachos, even vegans! Here's a recipe for vegan nacho cheese sauce so you can enjoy this snack without the dairy. This recipe makes about 5 servings, so you can either share with friends or save the extra for later in the week. Bonus points if you make your own tortilla chips and add your toppings of choice!



Ingredients:

-2 cups potato, cubed

-1 carrot, chopped into 1/4ths

-6 tbsp cashews

-6 tbsp nutritional yeast

-1 tbsp miso

-1 tbsp tamari

-1 cup almond milk

-3 tbsp tapioca starch

-2 tbsp pickled jalapeños

-salt to taste 


Method:

-boil potatoes, carrots, and cashews in a pot of water until soft

-transfer veggies and remaining ingredients to a blender and blend until smooth

-transfer cheese mixture to a sauce pan and heat over medium heat until thickened to desired consistency, whisking continuously

-serve cheese over tortilla chips and top with toppings of choice (I used tvp ground “beef”, tomatoes, and jalapeños)

-enjoy!
