there's just something SO GOOD about a bowl of crisp veggies on a hot summer day, especially if they're smothered in creamy avocado sauce. These avocado zoodles are my absolute favorite thing to make when its just too hot to cook. Aside from air frying the tofu, all you have to do is blend up the sauce, chop the veggies, mix, and enjoy!

Sauce ingredients:
-1/2 avocado
-3 oz silken tofu
-1 clove garlic
-1 tbsp nutritional yeast
-juice from 1/2 lime
-sprinkle of cayenne
-salt to taste
Veggies:
-1 zucchini, spiralized
-1/4 red onion, chopped
-5 cherry tomatoes, chopped
-6 oz extra firm tofu, air fried until crispy
Method:
-blend all sauce ingredients in a food processor until smooth
-toss all veggies with sauce until well mixed
-enjoy!
