Your new favorite frozen treat is here-- these chocolate covered Japanese sweet potato bites require only 3 ingredients to make but are so good you'll want to eat the entire batch in one sitting! Simply bake your potatoes, peel and chop before dipping in chocolate, freeze, and enjoy. Frozen sweet potato may seem like a strange choice, but I promise it has the best custardy texture. If you haven't tried it yet, you're missing out!

Ingredients:
-3 Japanese sweet potatoes
-1 cup chocolate chips
-1 tbsp coconut oil
Method:
-preheat oven to 425F
-use a fork to poke holes in the sweet potatoes
-place sweet potatoes on a baking tray and bake 40-50 minutes, or until potatoes are soft
-remove from oven and let potatoes cool about 20 minutes
-peel and chop potatoes into large cubes
-microwave chocolate chips and coconut oil until melted, stirring every 30 seconds
-dip potatoes in chocolate mixture and place on parchment lined baking tray
-place baking tray in freezer for at least an hour
-remove from freezer and enjoy!
