Peanut Cabbage Salad

My favorite salad of all time has to be this peanut cabbage salad. The combination of fresh veggies and crispy tofu all smothered in a creamy peanut sauce gets me every time! It's super easy to meal prep since the only component which requires cooking is the tofu, and it makes for a great on-the-go meal! The recipe below serves one, but feel free to make as many as you need for the week.

Salad ingredients:

-1 cup purple cabbage, sliced

-1 cup green cabbage, sliced

-1/3 red bell pepper, sliced

-1 carrot, sliced

-1/4 cup edamame

-6 oz extra firm tofu, air fried until crispy


Sauce ingredients:

-1 tbsp peanut butter

-1 tbsp tamari

-1.5 tsp rice vinegar

-1.5 tsp sriracha


Method:

-to make the salad, mix all ingredients well

-to make the sauce, stir all ingredients until smooth

-pour the sauce onto the salad, then toss until all ingredients are coated

-enjoy!
