These peanut noodles with chili lime tofu are my favorite thing to eat! They’re pretty easy to make (really all you have to do is bake some tofu, whisk together a sauce, and cook some noodles), but they taste like a fancy meal. Lots of nutty, spicy, sweet, and sour flavors all combined into one delicious bowl… check out the recipe below to try them for yourself!

For the tofu:
-2 tbsp lime juice
-2 tbsp tamari
-1 tsp chili powder
-6 oz tofu, sliced
For the sauce:
-1 tbsp peanut butter
-1 tbsp lime juice
-1 tbsp tamari
-1.5 tsp sriracha
-1.5 tsp maple syrup
To assemble:
-2 oz dry rice noodles, cooked
-1/4 cup edamame
-1 green onion, chopped
Method:
-preheat the oven to 450F
-for the tofu, whisk together lime juice, tamari, and chili powder
-place the sliced tofu in a container, then pour over the sauce, close the lid and shake to mix
-let tofu marinate at least 20 minutes, then place on baking tray and bake 20 minutes (or until crispy)
-to make the peanut sauce, whisk all ingredients together until smooth
-to assemble, stir together noodles, edamame, green onion, and peanut sauce
-top noodles with baked tofu and enjoy!
