I don't go to Trader Joe's often, but when I do I always pick up a few bags of cauliflower gnocchi! It's great to have on hand for easy meals, like this baked pizza gnocchi! Simply saute some veggies, throw in your gnocchi and pizza sauce, top with cheese, and bake for a lazy but tasty meal. Bonus is that I'm including the recipe for my tofu ricotta here too, which can be used for other baked pasta dishes or as a spread. Hope you enjoy!

For the tofu ricotta:
-6 oz extra firm tofu
-1.5 tbsp nutritional yeast
-1 tsp dijon mustard
-1 clove garlic
-2 tbsp almond milk
-salt to taste
Method:
-blend all ingredients until smooth
For the pizza gnocchi:
-1/2 cup chopped veggies of choice (I used red onion and red bell pepper)
-1.5 cups cauliflower gnocchi
-1/2 cup pizza sauce
-a few scoops of tofu ricotta
-1/2 cup vegan mozzarella shreds
Method:
-preheat oven to 400F
-add a bit of oil to a nonstick skillet and saute veggies until beginning to brown
-add gnocchi and saute for another minute before mixing in pizza sauce
-transfer mixture to baking dish and top with tofu ricotta and mozzarella
-bake 25-30 minutes, then remove from oven and let cool 10-15 minutes
-enjoy!
