Here’s how I make avocado toast… with a twist! Instead of bread, this recipe uses crispy air fried tofu as a base. It’s a super simple way to add a quick protein boost, and it also adds a bit of a cheesy flavor since it’s coated in nutritional yeast! As for toppings, of course I’ve got mashed avocado, but I also like to add chopped kimchi and a drizzle of gochujang for a little spice… it really is the perfect mix of flavors and textures!

Ingredients:
-6 oz extra firm tofu, pressed and sliced lengthwise
-2 tbsp nutritional yeast
-salt to taste
-1/2 avocado, mashed
-kimchi, chopped
-gochujang
Method:
-coat the tofu slices in nutritional yeast and salt
-air fry 20 minutes at 450F, flipped halfway
-when tofu is crispy, transfer to a plate and top with avocado, kimchi, and gochujang
-enjoy!
