These vegan burrito bowls are one of my favorite things to meal prep— I usually prep them on Sunday, but by the end of the week I’m always wishing I made more! The best part is the vegan meat mixture— I like to combine jackfruit, tvp, and tempeh to get a nice combination of textures as well as add some protein. The recipe below is for one serving, but feel free to make as many as you need for the week!

“Meat” mixture:
-2 tbsp onion, sliced
-1.5 oz tempeh, crumbled
-1/4 cup tvp, rehydrated in 1/4 cup water
-1/2 cup jackfruit
-1/4 tsp cumin
-1/4 tsp cayenne
-1/2 tsp chili powder
-1 tbsp tamari
Veggie salsa:
-5 cherry tomatoes, chopped
-1/2 jalapeño, chopped
-2 tbsp onion, chopped
-2 tbsp corn
-lime juice and salt to taste
To serve:
-1/4 cup dry rice, cooked
-1/4 cup refried beans
Method:
-to make the “meat”, heat a bit of oil in a skillet and sauté onion until soft
-add the tempeh and cook until golden
-stir in tvp, jackfruit, spices, and tamari
-cook until jackfruit softens and ingredients are well mixed
-to make the veggie salsa, stir together all ingredients
-serve rice with “meat”, refried beans, and salsa
-enjoy!
