Waffled Tofu BLT

It’s BLT season, so you know I had to make one Big Tofu style😎 That means we’re using waffled tofu in place of bread, because 1) it adds a protein boost and 2) it’s just more fun this way. Oh, and of course we’re also adding avocado. Check it out!

Ingredients:

-5 oz firm tofu, pressed dry and thinly sliced into 2 squares 

-2 tbsp nutritional yeast

-sprinkle of paprika

-sprinkle of black pepper

-salt to taste

-mashed avocado

-sliced tomato 

-vegan bacon of your choice (I used homemade tempeh bacon)

-lettuce


Method:

-stir together nutritional yeast, paprika, black pepper, and salt in a bowl

-coat each slice of tofu in nutritional yeast mixture

-heat your waffle maker, spray with oil, and add one slice of tofu, cooking until edges become crispy (this took me ~5-7 minutes, but it might vary depending on your waffle maker)

-repeat with remaining tofu slice

-add mashed avocado, tomato, bacon, and lettuce on one slice of tofu before covering with remaining slice

-enjoy!
